Summer heats up at Oakridge x Fairmont Pacific Rim Patio with Food Truck and Cocktails

To kick off the 2022 summer season, Fairmont Pacific Rim has partnered with Oakridge and Westbank to create another unique outdoor pop-up patio experience with delicious fare and refreshments, officially opening on Thursday, June 9 at 12:00 p.m.

Fairmont Pacific Rim’s Executive Chef Damon Campbell’s food truck stands center stage of the patio, serving a playful menu of appetizers, mains and refreshing desserts. Guests can choose from an array of signature dishes such as the Ahi Tuna Poke Bowl with ginger rice, avocado, tomato, cucumber, radish and crispy onion, Crispy Thai Chicken Wings with soya lime and cilantro, and the West Coast Crab & Shrimp Sandwich with preserved lemon and tarragon crème fraîche on a toasted bun – perfect for outdoor dining or packaged for take-away to enjoy while exploring Vancouver. To accompany Campbell’s dishes, award-winning Creative Beverage Director Grant Sceney has assembled a line-up of refreshing libations, with agave-centric cocktails like the Sandía Margarita with tequila, Aperol, watermelon, grapefruit, lime and Tajín, and the Chilosa Margarita with Don Julio Blanco, mezcal, cointreau, pineapple, lime and firewater, alongside an extensive selection of craft beers and local and international wines.

“We are thrilled to welcome guests back to the front plaza for our third summer pop-up patio,” said Regional Vice President and Fairmont Pacific Rim General Manager, Jens Moesker. “Chef Damon and the entire Fairmont team have created something special where hotel guests – and the entire Vancouver community – can come together, beat the summer heat, and enjoy some great food and drinks, all the while enjoying live music and other programming.”

The Pacific Rim plaza, intended to reflect the design of the 10-acre Oakridge Park, is inspired in equal parts by the rice terraces of Southeast Asia and the coastal temperate rainforests of British Columbia. The grassy patio is defined by distinct, carved hills creating topographic forms, with more than 50 seats, accented by individual fire pits, lounge areas, and umbrella-topped tables.

“Doing a patio pop-up on the plaza of the Pacific Rim has become a bit of a tradition for us,” says Westbank Founder, Ian Gillespie. “It’s something we do every summer and winter, to offer an interesting outdoor dining experience for our guests and visitors. Similar to the hotel, where we are constantly renovating and redesigning each aspect, we are always looking to layer on new details to this block of Coal Harbour in the goal of creating a more inspiring environment. The Oakridge x Pac Rim Patio pop-up is another way we are attempting to contribute a unique experience to our city. We hope people enjoy it.”

The outdoor patio will be open Thursday to Sunday from 12:00 p.m. to 8:00 p.m., with live music daily on Fridays and Saturdays until 8:00p.m., and until 6:00 p.m. every Thursday and Sunday. Seating for the Pop-up Patio is available on a first come first serve basis. Activities are weather dependent with updates shared in real time on Fairmont Pacific Rim’s Facebook and Instagram stories. Rain or shine, The Lobby Lounge and RawBar is open for daily service from 11:00 a.m. until late.
