A Sweet Summer Treat: Fairmont Waterfront’s Ice Cream Pop-Up with HYPE Chocolate

This summer, a delicious collaboration is taking place in the heart of downtown Vancouver. Fairmont Waterfront’s ARC Restaurant has joined forces with local chocolatier HYPE Chocolate to bring an exclusive artisanal ice cream pop-up to the ARC Patio.

HYPE Chocolate, co-founded by Scott Symons and Marlayna Pincott in 2022, is known for its creative and high-quality sweet treats. This partnership with Fairmont Waterfront highlights a shared commitment to innovation, sustainability, and community. HYPE Chocolate ethically and sustainably sources its cacao through a partnership with Cocoa Horizons. This aligns with the Fairmont Waterfront’s own eco-conscious values, which have earned it a ‘5 Green Key Hotel’ certification from Green Key Global.

The pop-up features a menu of flavours created specifically for this collaboration, drawing inspiration from the hotel’s surroundings and local ingredients. One of the signature offerings is a Lemon, Wildflower Honey & Thyme sorbet, a nod to the hotel’s own rooftop garden and bee apiary.

For those craving something rich and decadent, the Salted Chocolate Chocolate Chocolate ice cream features Vancouver Island sea salt and is adorned with 24k gold flakes. Another luxurious option is the Vanilla Bean & Brown Butter Caramelized Croissant ice cream, which includes house-made croissant crisps and is also topped with 24k gold flakes. Coffee lovers can enjoy the Coffee X Prototype Espresso Bean, a rich coffee ice cream made with beans from Prototype Coffee.

In addition to these unique ice cream flavours, the pop-up also offers Local Berry Cups with Melted Chocolate Drizzle, a refreshing treat featuring seasonal local berries.

You can find the pop-up adjacent to ARC Restaurant’s patio on weekends from 11 AM to 7 PM throughout August and the first two weeks of September.
