Michelin-Starred Chefs Unite for Six-Week Pop-Up at Fairmont Pacific Rim

Vancouver’s Fairmont Pacific Rim hotel is set to host a six-week pop-up featuring some of the city’s most acclaimed Michelin-starred chefs. The pop-up, which will take place on the hotel’s patio, will run from June 1 to August 27.

Each week, a different chef will create a special summer-inspired dish that will be available only at the pop-up. For every feature chef dish sold, a portion of the proceeds will be donated to the BC Hospitality Foundation. The lineup includes:

In addition to the rotating chef dishes, Executive Chef Damon Campbell will be serving a fresh summer menu from his food truck. Creative Beverage Director Grant Sceney has also curated a selection of refreshing cocktails and wines to accompany the food.

The Pac Rim patio pop-up will be open Wednesday to Sunday from 12pm to 8pm. Live music will be performed daily on Fridays and Saturdays until 8pm, and on Thursdays and Sundays at 6pm. Seating is available on a first-come, first-served basis and is weather dependent.
