Chef Trevor Bird’s When It Grains It Pours Avocado and Ricotta with Pickled Jalapenos
Yield: 4 toasts
Prep time: 10 minutes
4 slices Arnold’s When It Grains It Pours bread
1 small tub Ricotta cheese
2 teaspoons Butter
4 Basil leaves
4 Mint leaves
4 Jalapenos, sliced on a mandolin
200ml Rice Wine Vinegar
Salt to taste
1. Bring vinegar and honey to a boil and season with salt
2. Pour hot liquid over sliced jalapenos. Let sit for at least 10 minutes.
3. Can be made up to a month in advance.
Fresh Lemon Juice – 100ml
Olive Oil – 300ml
Honey – 100ml
Salt & Black Pepper to taste
Place lemon juice and honey in a blender with salt and pepper. Turn blender on medium speed and slowly drizzle in olive oil. Pour into a jar keep in fridge for up to one week.
Put a pan on med-low heat and melt butter in pan. Place bread in the pan and let toast for 2-4 minutes till golden brown, Turn and toast the opposite side. Slice the avocado in half and slice in the avocado skin. Scoop out with a spoon and spread on the toast. Place dollops of ricotta on top and season the whole piece with a large pinch of salt. Place pickled jalapenos on top, tear the basil and mint and put evenly on top of toast. Drizzle on lemon vinaigrette and enjoy
Chefs Josh Gale S’Wheat Dreamin’ of a BLT
4 slices Arnold S’Wheat Dreams bread, toasted
1 head, bib lettuce
3 tomatoes, sliced
1 avocado, sliced
8 slices of good quality bacon
4 free range eggs
2 tbsp mayonnaise
1 tbsp maple syrup
Salt and pepper to taste
Cook bacon until crispy, drizzle with maple syrup. Crack eggs into a ramekin and gently drop into a pot of salted simmering water, cook for three minutes. Evenly spread mayonnaise on two slices of Arnold S’Wheat Dreams bread. Add a few leaves of bib lettuce and an even layer of sliced avocado and season with salt and pepper. Add a layer of sliced tomatoes and then four slices of the maple glazed bacon. Finish the sandwiches with two poached eggs and some freshly cracked black pepper.
