Toast to Mindfulness: Seedlip Cocktails at Fairmont Waterfront

After the rush of the holidays, January always feels a bit different. Everything slows down. The days are quieter, and many of us start looking for ways to feel a little more grounded. Often, this means cutting back on certain things, like alcohol. But choosing to drink less doesn’t mean you have to stop socializing or give up on great flavour.
This month, ARC Restaurant at the Fairmont Waterfront is proving exactly that. They have launched a Mindful January menu that focuses on flavour and experience rather than just the alcohol content.
They’ve teamed up with Seedlip to make this happen. If you haven’t heard of Seedlip, it’s quite interesting. It is the world’s first distilled non-alcoholic spirit. The founder, Ben Branson, was inspired by herbal remedies dating back 300 years. He wanted to move away from sugary, simple mocktails and create something sophisticated. The result is a botanical drink that has the complexity of a spirit but without the buzz.
The bar team at ARC has taken these spirits and built a menu that feels just as thoughtful as their regular cocktail list. They are offering three distinct drinks, and each one brings a different vibe to the table.
First up is Clarity. If you are looking for something to wake up your palate, this is the one. It mixes Seedlip Agave with cucumber water, grapefruit, and lavender. They top it off with ginger beer for a bit of fizz. It tastes crisp and bright.
If you are looking for something cozier, you might enjoy Warmth. It uses Seedlip Spice 94 and blends it with apple and a mango chai lemonade. With added cinnamon and ginger, it is aromatic and comforting. It has a gentle heat that settles in perfectly on a cold evening.
Then there is Awaken. This one is for those who like bold flavours. It combines Seedlip Grove 42 with coffee, chai, and pineapple. That might sound like an unusual mix, but the bitterness of the coffee pairs really well with the citrus and the spice. It is energizing and has a lot of depth.
If you are having trouble picking just one, you don’t have to. They are offering a Reset Flight, which lets you try smaller versions of all three. It is a great way to explore how different ingredients play together.
So, if you are looking to keep things light this month, stop by Fairmont Waterfront. The Mindful January menu is available all month long. It is a lovely way to enjoy a night out, catch up with friends, and leave feeling refreshed.
