Canada 150 brunch feast at YEW seafood + bar in Four Seasons Hotel Vancouver


Let’s raise our glass and toast to Canada’s 150th birthday! Chef Weimar Gomez and the team at YEW seafood + bar has crafted two unique creations to celebrate Canadian cuisine.

YEW’s own Jessica Hoffman has created a tasty twist on Canada’s favourite cocktail, the Caesar. The smoky Rocky Mountain Caesar features Canadian Club Whiskey, Chartreuse, Clamato juice & bacon. For an extra kick, it is mixed with adobo peppers, maple syrup, olive juice and lime. It’s savoury, sweet, salty, sour and bitter in one glass.

The highlight is Chef Weimar’s super seafood burger aka West Coast Salmon East Coast Lobster Burger. It’s an oversize seafood sandwich with a maple syrup glazed lobster tail, wild salmon filet, topped with Canadian back bacon, tomato, lettuce and avocado on a house-made brioche bun. It is full of flavour from the Atlantic lobster to the grilled Pacific wild salmon.

It is served surrounded by hand-cut waffle ketchup chips.

In addition, YEW offers a twist on the classic brunch menu like fresh mini donuts with pina colada dip.

Smoked Salmon & Avocado Toast with multigrain toast, avocado, soft boiled egg, microgreens. Cripsy toast topped with creamy avocado and smoked salmon is simply delicious.

Ham & Cheese Waffle with shaved ham, smoked maple syrup, aged cheddar and fried egg. The waffles are crisp on the outside and soft and fluffy on the inside. It’s a sweet and savoury bite with melting cheese and flavourful ham.

The new brunch items are available all Summer until Labour Day.
